| ingredients: | 2 full racks of baby back ribs 1 Tbsp vegetable oil 4 Tbsp Memphis Dust 1/2 tsp kosher salt per pound of meat 4 tsp liquid smoke (one tsp per each half rack) 1 cup of bbq sauce |
| instructions: | 1) Rinse the ribs in cold water to remove any bone bits from the butchering and any bacterial film that grew in the package. 2) Remove the membrane from the under side. Insert a butter knife under the membrane, then use a paper towel to peel off the skin. Trim the excess fat from both sides. 3) Rub the salt all over the meat and let it sit for 1-2 hours. 4) Cut the ribs in half. This will result in 4 half slabs. Place half rack on its own sheet of heavy duty foil. 5) Coat the meat with a thin layer of vegetable oil and then spread the Memphis Dust on all surfaces of the meat. 6) Spread 1 tsp of liquid smoke over each half rack. Wrap tightly in foil. 7) Heat oven to 225° degrees. Place foil wrapped ribs on sheet pan and cook in oven for 2 hours. Rotate halfway through. 8) Remove ribs from foil and cook in oven at 250-275° for anohter 2 hours or until the ribs are tender. 9) Raise the rack one level up, switch to broil. 10) Lather ribs with bbq sauce. Broil each side till boiling. |
