Banana muffins
description:
A great way to use up old bananas.
 
ingredients: 1.5 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/4 cup butter, melted
1/4 cup apple sauce (if no apple sauce, increase butter to 1/3 cup)
1/2 tsp vanilla
chocolate chips (optional)
 
instructions: 1) Set oven rack in the middle, not bottom of the oven. Preheat oven to 350°. Coat muffin pans with non-stick spray, or use paper liners.

2) Sift together the flour, baking powder, baking soda, and salt; set aside.

3) Combine bananas, sugar, egg, vanilla, apple sauce, and melted butter in a large bowl.

4) Fold in flour mixture, and mix until smooth. Do not overmix.

5) Scoop into muffin pans using a 3 Tbsp (large) scooper. This should result in ~12 standard muffins. Add 3-4 chocolate chips per muffin, if desired.

6) Bake in preheated oven. Bake muffins for 18 minutes rotating halfway through. Muffins will spring back when lightly tapped.
