Beef curry (homemade)

A homemade japanese curry that's close, but not there yet.

ALTERNATIVE: This recipe can be shortened by using 1lb flank steak and replacing 2 cups of water with a can of beef broth. Boil the beef with the vegetablesto extract more flavor and get the beef more tender.
 
ingredients: 2 lbs beef chuck, cut into 1" cubes
1 Tbsp oil

1 Tbsp unsalted butter
1 large onion, chopped into large pieces

45 g unsalted butter
45 g all-purpose flour
1.5 Tbsp curry powder

3 large carrots, peeled and cut into irregular chunks
1 large potato, peeled and cut into irregular chunks
2 stocks of celery, chopped
(there should be an equal amount of carrots and potatoes)
1/2 cabbage head, chopped

1 Tbsp ketchup
1/2 Tbsp worcestershire sauce
1/2 Tbsp soy sauce
1/2 tsp salt
1 Tbsp brown sugar
 
instructions: 1) Generously season the beef with kosher salt and pepper.

2) Heat oil in the steamer stock pot. Brown the beef in batches until well browned. Remove beef and dab away any excess oil from the dutch oven.

3) Add a little water to the pot and scrub off the fond. Add the beef back to this pot along with 6 cups of water.

4) Bring to boil, skim the scum, and simmer for ~1.5 hours or until tender.

5) Remove beef to stop the cooking process.

6) Bring the broth back up to a simmer and add the carrots and celery to the water for 5 minutes.

7) Add potatoes and cook till tender.

8) Turn off head and add cabbage to soften. Remove all vegetables to stop it from cooking.

9) In the wide dutch oven, add 1 Tbsp of butter and caramelize the onions. Remove when done.

10) Add the butter and flour. Stir with a wooden spoon to combine into a roux and cook until darkened.

11) Add curry powder and stir for 1 minute.

12) Add one ladle of the beef stock to the roux and whisk to combine. Continue adding one ladle of stock while whisking until done.

13) Add the caramelized onions, sugar, ketchup, worcestershire, soy sauce, and salt. Simmer for 10 minutes.

14) Turn off the heat. Add the beef and vegetables to the curry and let it combine for at least 15 minutes.
