| ingredients: | 3 lbs beef chuck 5 stalks celery, cut into irregular chunks 4 carrots, cut into irregular chunks 1 onion, chopped into larger chunks 2-4 cloves of garlic, smashed 1 teaspoon ginger, grated 2 Tablespoons sugar 1 tsp table salt ** cut in half if using Better than Bouillon ** 2 cans (14 oz each) beef broth ** or Better than Bouillon ** 1 cup water 1 16oz can tomato sauce 3 bay leaves 2 teaspoons dried basil 1 potato 2-3 Tablespoons cornstarch |
| instructions: | 1) Remove big pockets of fat from the meat and chop into 3/4-inch cubes. Salt the beef. Brown meat batches in the dutch oven. Remove meat. 2) Add onion and cook in dutch oven. 3) Add ginger and cook for 30 seconds. 4) Add 1/2 the beef broth to deglaze pot with a wodden spoon. 5) Add meat, sugar, salt, water, and rest of the broth. 6) Bring to boil and lower to simmer. 7) Skim the scum from the pot. 8) Add basil, garlic tomato sauce, and bay leaves. Cover and simmer for 1 hour. Continue longer if the meat isn't tender. 9) Add carrots and celery. Simmer for 20 minutes 11) Add corn starch to the sauce to thicken. 12) Add potatoes and simmer for 10 minutes or until done. |
