Beef tacos
description:
A replacement for the Taco Bell seasoning packets. It's not as good as Taco Bell, but you know exactly what's going into your food.
 
ingredients: 4 teaspoons vegetable oil or corn oil
2 small onion, chopped small (about 2/3 cup)
6 medium cloves garlic, minced or pressed through garlic press (about 1 tablespoon)
4 tablespoons chili powder
2 teaspoon ground cumin
2 teaspoon ground coriander
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1 teaspoon Salt
2 pound 90% lean ground beef (or leaner)
1 cup tomato sauce
1 cup low-sodium chicken broth
2 teaspoon brown sugar
4 teaspoons vinegar (preferably cider vinegar)
 
instructions: 1) Heat oil to dutch oven until shimmering. Cook ground beef, breaking up the meat. Cook until beef is cooked through. Remove with a slotted spoon and discard oil.

2) Heat oil and add onions and cook, stirring occasionally, until softened.

3) Add garlic, spices, and 1/2 tsp salt. Cook, stirring constantly, until fragrant, about 1 minute.

4) Add ground beef back to the pot and combine.

5) Add tomato sauce, chicken broth, brown sugar, and vinegar; bring to simmer.

6) Reduce heat and simmer, uncovered, stirring frequently and breaking meat up so that no chunk remain. Liquid should be reduced and thickened (mixture should not be completely dry). About 10 minutes.
