Braised beef shank

ingredients: 3-3.5 lbs beef shank

1/2 cup soy sauce
1 Tbsp dark soy sauce
1/2 cup wine (shaoxing, sake)
6 cups water

2 green onions
6 slices ginger
1/2 tsp peppercorns
5 star anise wedges
2 black cardamon pod
1 cinnamon stick
5 cloves
2.5 Tbsp rock sugar
3/4 Tbsp fennel seeds
3 garlic heads
 
instructions: 1) Cook shank in boiling water for 10 minutes to remove scum

2) Add 2 tablespoons oil to instant pot, combine green onions, ginger, peppercorns, star anise, cardamon, cinnamon stick, cloves, garlic and fennel seeds. Cook until fragrant 1-2 minutes

3) Add rest of ingredients

4) Cook 1 hour at high pressure then quick release

5) Cool and refrigerate overnight.

6) (Optional) use sauce a concentrate for noodle soup.
