Broccoli Cheese Quinoa Bites

Great way to get quinoa and broccoli in the kids.
 
ingredients: 1/2 cup uncooked quinoa (2 cups cooked)
2 eggs
2 garlic cloves, minced
1.5 cups grated sharp cheddar cheese
1 cup finely chopped cooked broccoli
salt/pepper
 
instructions: 1) Combine all ingredients
2) Fill mini or regular sized baking cups
3) 350° oven, cook until firm and slightly brown on top. Filling more will take longer to cook.
4) Mini cups take 15-20 minutes, Regular 25-30 minutes
