Brown Sugar Salmon

Works on either the grill or the oven
 
ingredients: 1/3 cup brown sugar
2 1/2 Tbsp Dijon mustard
juice of 1/2 lemon
four 7oz salmon fillets
2 tsp vegetable oil
 
instructions: 1) Preheat oven to 400°. In a small bowl, whisk together the brown sugar, mustard, lemon juice, and 1/2 tsp pepper.

2) Heat a large, oven proof skillet over high heat. Rub the salmon with oil and season with salt and pepper. Place salmon in skillet skin side up and cook until a crisp brown crust forms, about 4 minutes.

3) Remove from the heat, flip, the salmon, and coat with the brown sugar mixture. Transfer the skillet to the oven and bake until the glaze caramelizes and the fish is cooked through, about 5 minutes.

Option #2: Set oven to broil to finish the salmon to really crisp the top.

Option #3: Abandon the skillet and oven and grill the salmon. Much like above, rub oil on the seasoned salmon and place skin side up on the grill over direct heat. Flip salmon to open side of grill for indirect heat and baste with brown sugar mixture.
