Butternut squash chipotle chili

Vegetarian dish.
 
ingredients: 2 Tbsp olive oil
1 medium onion, chopped
2 red bell peppers, chopped
1 butternut squash, peeled and chopped into 1/2-inch cubes
1/2 tsp table salt

4 garlic cloves, minced
1 Tbsp chili powder
1/2 Tbsp chipotle pepper, chopped (in adobo) (or 1 tsp chipotle chili powder)
2 tsp dried oregano
1 tsp ground cumin
1/4 ground cinnamon

1 bay leaf
2 cans black beans, rinsed and drained, or 3 cups cooked
1 can diced tomatoes, including liquid
2 cups broth

1 can corn, drained
 
instructions: 1) Cook onion, peppers, squash in the large pot with the oil. Add salt to help soften.

2) Add garlic and spices and cook till fragrant.

3) Add everything else except corn.

4) Cover. Simmer for 30-45 minutes or until squash is startingt to soften.

5) Remove cover and simmer till thickened.

6) Finish with corn.
