Cauliflower and lentil tacos

ingredients: Califlower
1 large head of cauliflower, sliced into bite-sized florets
2-3 Tbsp olive oil
Salt and pepper

Seasoned lentis
1 Tbsp olive oil
1 cup chopped yellow onion
2 large galic cloves, minced
2 Tbsp tomato paste
1/2 tsp ground cumin
1/2 tsp chili powder
3/4 cup lentils, picked over for debris and rinsed
2 cups chicken or vegetable broth

Chipotle sauce
1/3 cup mayonnaise
2 Tbsp lime juice
2 Tbsp adobo sauce
1 tsp sugar
Salt and pepper to taste

Tortillas
 
instructions: Chipotle sauce
1) Whisk together the ingredients and set aside.

Seasoned lentis
1) Warm the olive oil in a medium-sized pot over medium heat.

2) Saute the onion and garlic with a dash of salt for about 5 minutes, until the onions are softened and turning translucent.

3) Add the tomato paste, cumin and chili powder and sauté for another minute, stirring constantly.

4) Add the lentils and the broth. Raise heat and bring the mixture to a gentle simmer. Cook, uncovered, for 20 minutes to 45 minutes, until the lentils are tender and cooked through.

5) Reduce heat as necessary to maintain a gentle simmer, and add more broth or water if the liquid evaporates before the lentils are done.

6) Once the lentils are done cooking, drain off any excess liquid, then cover and set aside.

Cauliflower
1) Preheat air fryer to 400°.

2) Toss cauliflower florets with olive oil, salt, and pepper. Cook in airfryer and toss every 5 minutes. This should take around 10 minutes total.
