| ingredients: | 2-3 lbs chicken thighs 4 guajillo chile cleaned, boiled, de-seeded 1 ancho chile cleaned, boiled, de-seeded 4 cloves of garlic 1/2 onion, roughly chopped 1.25 cup of pineapple juice 1 Tbsp oregano 1 Tbsp thyme 1 Tbsp pepper 1 Tbsp cumin 1-2 Tbsp paprika 1.5 Tbsp table salt 1/4 tsp ground cloves Pineapple rings |
| instructions: | 1) Blend all of the ingredients together until completely combined. 2) Strain the liquid over a bowl to end up with a smooth marinade. 3) Add one layer of meat in a large bowl or baking dish and cover with the marinade, and then repeat in layers until all of the meat and marinade have been used. 4) Cover with aluminum foil and refrigerate for at least 4 hours (overnight is best) 5) Remove from the refrigerator and grill the meat until cooked through. Pan frying in the panini pan works well too. |
