Chinese-style ribs

ingredients: 1 rack of baby back ribs
1 tsp kosher salt

1 piece star anise
1 piece cinnamon bark (5-7cm)

1 thumb-sized piece of ginger, minced
2 pieces of shallot, minced
4 cloves garlic, minced

1 cup chinese rice wine
3 Tbsp brown sugar
1 Tbsp hoisin sauce
1 Tbsp oyster sauce
2 Tbsp soy sauce
2 Tbsp dark soy sauce
2 Tbsp rice vinegar
 
instructions: 1) Rinse and dry the ribs. Remove the silver skin. Rub kosher salt over the ribs and place in the fridge for 1-2 hours.

2) Pat dry the ribs.

3) Brown the ribs on all sides for 1-2 minutes. Remove.

4) In the instant pot, sautee the star anise and cinnamon bark in oil for 2 minutes.

5) Add the giner, shallot, garlic to the pot and cook until soft.

6) Add the rest of the ingredients and mix to combine.

7) Add ribs to the liquid and add more water if needed.

8) Cook under high pressure for 30 minutes. Let the pot stand for 15 minutes afterwards.

9) Turn the instant pot to sautee and simmer until the liquid is thickened.
