Chipotle chicken
description:
Flavorful chicken that can be baked, cooked in a pan, or grilled. This dish goes really well with cilantro lime rice and corn salsa.
 
ingredients: 1/4 medium onion, grated
2 cloves garlic, coarsely chopped
1 Tbsp adobo sauce (from the chipotle can)
1 Tbsp ancho chile powder
1 Tbsp olive oil
1 tsp cumin
1 tsp dried oregano
1 tsp salt
1/4 tsp black ground pepper

2 lbs boneless, skinless chicken thighs
 
instructions: 1) Mix onion, garlic, adobo sauce, ancho chile powder, olive oil, cumin, dried oregano, salt, pepper, and 1/4 cup water in a large measuring cup.

2) Add more water until there's 1 cup of the marinade.

3) Heavily salt the chicken with koster salt and place chicken in a bowl, cover with marinade, and cover. Refrigerate overnight.

4) Grill (or bake or pan fry) the chicken. An alternative would be to cook the chicken in the air fryer for 10 minutes at 400°. (flip halfway)
