| ingredients: | 1/3 cup mayonnaise 16 oz pineapple chunks in juice, drained and chopped fine. 1/4 cup pineapple juice (from above) 3 Tbsp minced fresh cilantro 3 garlic cloves, minced 1.5 Tbsp chipotle chiles in Adobo, minced 1/2 head cabbage, chopped 1/2 carot, grated 2 pork tenderloins (2 lbs total), sliced in half lengthwise 1 package of corn tortillas (30 count) |
| instructions: | 1) Whisk mayonnaise, pineapple juice, cilantro, garlic, and chipotle in large bowl. 2) Reserve 1/4 cup mayonnaise mixture, then add pineapple chunks, cabbage, carots, and 1/2 tsp salt to bowl with remaining mayonnaise mixture and toss to combine. 3) Pat pork dry with paper towels and season with salt and pepper. Rub with reserved mayonnaise mixture and grill over hot fire until brown and meat measures 165°. Transfer to cutting board, tent with foil, and let rest for 5 minutes. 4) Grill tortillas over hot fire until lightly charred, about 20 seconds per side. Slice pork thin, arrange on tortillas, and top with pineapple slaw. |
