Creamy coleslaw

Creamy and sweet coleslaw that pairs well with a teriyaki beef sandwich.
 
ingredients: 1 pound green cabbage (about half a medium head), shtredded fine or chopped (6 cups)
1 carrot, peeled and grated
1/4 cup granulated sugar
2 tsp kosher salt
1/2 cup mayo
2 Tbsp rice vinegar
 
instructions: 1) Toss cabbage and carrots with sugar and salt in a bowl and move it to a colander set on a plate. Let it stand until the cabbage wilts, at least 1 hour.

2) Press cabbage with paper towels to help remove as much moisture as possible.

3) Move cabbage to an empty bowl and mix in mayo, rice vinegar, and pepper.
