Cone sushi

Lovely cone sushi recipe. This recipe is sweet. Be sure to get the fresh aburaage. Do not reduce the sugar content.
 
ingredients: Age / water
12 age triangles (they may come in rectangles)
6 cups water

Sushi rice
1.75 cups rice
1/8 cup cooked carrots, chopped fine (optional)

Sushi vinegar
1/2 cup sugar
1/2 cup vinegar
pinch of salt

Age seasoning
2 1/2 cups water
1/2 cup soy sauce
1/2 cup sugar
1 Tbsp hondashi
 
instructions: 1) Cook rice in 2.25 cups of water -- reduced from the normal 2.5 cups since we're adding a lot of the sugar/vinegar sauce to the cooked rice afterwards.

2) Whisk the sugar, vinegar, and salt together. You may have to microwave the combo for 30 seconds.

3) Using a pot with a wide diameter, combine age in water and boil for 30 minutes to remove oil. Flip age every 5 minutes.

4) Remove age and wash the pot quickly. Cool the age and rinse/squeeze to remove liquid and any remaining oil.

5) Combine age seasonings and bring to a boil. Add age and boil for another 20 minutes, flipping every 5.

6) Slowly add sugar/vinegar to the hot rice till you hit the desired sweetness. (You may not need all of it.)

7) Cool age slightly and squeeze. Stuff with prepared rice. Do not over stuff.
