| ingredients: | 8 tortillas 1 1/2 cups masa harina 1 tsp table salt 1 3/8 cup warm water |
| instructions: | 1) Heat up the water in the microwave. 2) Dissolve the salt in the water. This provides even distribution of the salt. 3) Slowly pour the water into the corn flour. Mix and incorporate. Add enough water where the flour is no longer dry, but also not sticky. 4) Knead a bit. Cover with a wet paper towel. Let it rest for at least 5 minutes. 5) Heat the cast iron pan at 5. 6) Separate the dough into 8 balls. Press the ball between a ziplock bag using a pie dish. 7) Cook in a dry cast iron pan for 60 seconds, 60 seconds, and 30 seconds. 7a) Cook for 60s on one side, flip, cook for another 60s, flip, and then cook for 15s. It should puff up after the last flip. |
