Quinoa Cornbread
description:
Best eaten warmed. May subsitute whole wheat flour. May cut down on sugar or substitute brown sugar.
 
ingredients: 1.5 cups cornmeal
2.5 cups milk
2 cups flour
1 Tablespoon baking powder
1 teaspoon salt
3/4 cup sugar
2 eggs
1/2 cup coconut oil
1 cup cooked quinoa (1/4 cup dry)
 
instructions: 1) Combine the cornmeal and milk and let stand for at least 10 minutes
2) Combine flour, baking powder, salt, and sugar. Beat in eggs and oil until the mixture is crumbly.
3) Add the milk/cornmeal mixture and beat until just combined, about 30 seconds. Do not overbeat.
4) Stir in quinoa, breaking up any lumps
5) Pour batter into baking cups.
6) 400°, bake until toothpick combes out clean. At least 15 minutes
