Corned beef hash
description:
This dish goes well with corn chowder.
 
ingredients: 1 can corned beef
4 large russet potatoes
1 small onion, diced
2 eggs
 
instructions: 1) Cut potatoes into cubes, cover with water and 1 Tbsp table salt. Bring to boil. Lower the temperature and cook until the potatoes are soft.

2) Cook the onions in a separate pan until softened.

3) Drain potatoes and mash.

4) Mix in corn beef, cooked onion, egg, 1 tsp salt, 1 tsp pepper. Take a small portion, roll in it flour, and make into a patty. This should yield 12-14 patties.

5) Preheat the air fryer at 375°.

6) Oil one side of the patty, place it oil-side down in the air fryer, and add more oil to the top side of the patty. Cook for 10 minutes.

7) Flip and cook for another 5-7 minutes or until done.
