Couscous salad

ingredients: 2 tablespoons extra-virgin olive oil
1 cup couscous
1 1/2 cups warm water
kosher salt and ground pepper
1/2 pound button mushrooms, sliced
1 red pepper, chopped into 1/2-inch pieces
1 small bunch green onions, sliced
1 can corn, drained
1 can black beans, rinsed and drained
2 tablespoons fresh lime juice
1 jalapeno (optional), sliced
 
instructions: 1) In a medium saucepan, heat 1 tablespoon oil over medium-high heat. Add couscous and cook, stirring constantly, until golden brown and fragrant, about 4 minutes. Add 1 1/2 cups water, season with salt, and bring to boil. Reduce heat to low, cover, and simmer until liquid is absorbed and couscous is tender, about 15 minutes. This may take less than 15 minutes. Remove from heat when water is absorbed.

2) Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat. Cook mushrooms, peppers, and jalapeno, stirring occasionally, until tender, about 5 minutes. Season mushrooms and peppers with salt and pepper. Add corn and beans to skillet to mushroom/peppers to heat corn and beans.

3) Remove from heat. Combine couscous and green onions with corn/beans/jalapenos mixture n pan. Season to taste with salt, pepper, and lime juice. Serve.
