Vanilla cupcakes
 
ingredients: 1.5 cups (6 oz) cake flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp table salt
2 large eggs, at room temperature
1 tsp vanilla extract
2/3 cups sugar
6 Tbsp unsalted buffer, melted and cooled slightly
2/3 cups buttermilk
 
instructions: 1) Adjust oven rack to middle position and heat oven to 325°.

2) Line a muffin tin with paper or foil cupcake liners.

3) Whisk flour, baking powder, baking soda, and salt in a medium bowl until combined.

4) Whisk eggs and vanilla in a large bowl until well blended.

5) In stead stream, pour sugar into eggs, whisking constantly.

6) Gradually whisk in melted butter, then add buttermilk.

7) Add one-third of dry ingredients to bowl with wet ingredients.

8) Using whisk, gently combine; a few streaks of flour should remain.

9) Repeat twice with remaining dry ingredients.

10) Continue to gently stir batter with whisk until most lumps are gone. D not overmix.

11) Fill cuplcake liners about two-third full. Bake, with tins on middle rack, until cupcakes just being to color and toothpick inserted into center comes out clean, 18-22 minutes.

12) Cool pans on wire rack for 5 minutes, then remove, place back on rack, and cool to room temperature.
