Daikon carrot pickle
description:
A nice side dish that's both tangy and sweet.
 
ingredients: 12 oz daikon, peeled and cut thin
3 carrots, peeled and shredded

Moisture remover
1 tsp sugar
1/2 tsp table salt

Pickling liquid
1/2 cup water
3/4 cup white vinegar
1/3 cup sugar
3/4 tsp salt
 
instructions: 1) Place the daikon and carrots into a colander, sprinkle on the moisture remover sugar and table salt, and mix with hands.

2) Let the daikon and carrots sit for 30 minutes. This should help remove a lot of moisture from the veggies.

3) Heat the water in the microwave and the mix in the sugar to dissolve. Add the vinegar and salt.

4) Squeeze out any remaining water from the veggies, move to a jar, and cover with the pikling liquid.
