| ingredients: | 4"x5" kombu 3 cups bonito flakes 4 cups water |
| instructions: | 1) Gently clean the kombu with a damp cloth without removing the white powdery substances. Do not wash the kombu. 2) Make a couple of slits on the kombu. Place the kombu and water in a sauce pan and soak for 3 hours. 3) Slowly bring to a boil over medium/low heat, skimming the surface occasionally. 4) Just before boiling, remove the kombu, turn off the heat, and let the dashi cool down a bit. 5) Add the bonito and bring to a boil again, skimming occasionally. 6) Once the dashi is boiling, reduce the heat, simmer for just 30 seconds, and turn off the heat. Let it sit for 10 minutes. 7) Strain the dashi and store. |
