ingredients: 1 package of Hanpen (fish cake)
4 eggs

2 Tbsp mirin
1 Tbsp sake
1 Tbsp sugar
1 tsp honey
1/2 tsp soy sauce
 
instructions: 1) Preheat the oven to 400°.

2) Line the 8"x8" glass baking dish with parchment paper.

3) Cut hanpen into 1/2-inch cubes and whisk the eggs.

4) Add the hanpen and eggs into a bender with all of the other ingredients.

5) Blend until smooth, about 1.5 minutes.

6) Strain the egg mixture through a mesh strainer.

7) Pour the mixture into the baking dish.

8) Bake at 400° for 20 minutes or until slightly brown on top. If the top isn't golden brown, switch to a broiler for 2 minutes or until the surface if golden brown.

9) Remove the baking dish from the oven and let omelette deflate and cool to handle for just 2 minutes.

10) Remove the omelette and place the bamboo roller on top. Flip.

11) Score the omelette with 1/8-inch deep slices every 1/2 inches.

12) Roll the omette into a tight cylinder.

13) Place rubber bands around the bamboo roller to hold it into place. Wrap in plastic wrap.

14) After 2-3 hours and completely cooled, slice.
