| ingredients: | 4 slices of bacon, sliced into small chunks 1.5 - 2 cups of vegetables 8 eggs 1 cup grated cheese 3 Tbsp milk |
| instructions: | 1) Cook the bacon in the cast iron skillet. Remove and set aside. 2) Using the bacon fat, cook the vegetables until softened. 3) Heat the oven to 350°. 4) Whisk eggs, milk, wth a tsp of table salt. 5) Add the bacon back to the vegetables to heat up. Stir in the eggs. 6) Scrape the bottom of the pan to partially cook the eggs. 7) When halfway cooked, stir in most of the cheese, level out, and sprinkle the rest of the cheese on top, and then move to the oven. 8) Cook in oven for 6-10 minutes until the middle is set. 9) Let the eggs sit for 5 minutes. |
