| ingredients: | 2 carrots 2 eggs 1 jar takuan 6 shitake mushrooms 1 cucumber 4 sheets of nori 2 1/2 cups rice Alternative 1 Tofu cutlet (deep friend tofu block), cut into thin strips 1 cucumber 1 carrot, cut into thin strips using a peeler 1 avocado, cut into thin strips 1 jar takuan, cut into thin strips sriracha mayo |
| instructions: | 1) Wash and soak the mushrooms in water for a few hours. Discard most of the mushroom water when ready to chop. 2) Make the 2 1/2 cups rice. Use only 2 3/4 cups water. 3) Peel and slice carrots in small strips. Slice takuan and mushrooms in small strips as well. The cucumber should be slided in long strips with its seeds removed. 4) Add tuna to a small pan. Add a small amount of soy sauce and sugar to taste. Keep mixing till fully incorporated. Remove and set aside. 5) Add carrot to the small pan. Add a small amount of soy sauce and sugar to taste. Keep mixing till the carrots are soft. Remove and set aside. 6) Add mushrooms to a small pan with some of the mushroom water. Add soy sauce and sugar to taste. Cook till softened. 7) Cool rice completely. Add spoon fulls of the sushi rice sauce. 8) Use the full sheet of nori to make four rolls. |
