| Greek lemon rice |

| ingredients: | 1 cup long grain rice 1/2 medium onion, chopped 1 garlic clove, minced 1/2 cup orzo pasta 1/4 tsp turmeric 2 Tbsp lemon juice 3/4 can chicken broth (1.5 cups) 1/4 tsp table salt 2 tsp dill |
| instructions: | 1) Wash rice well and then soak in cold water for 20 minutes. Make sure to have enough water to cover the rice. Drain well. 2) Heat olive oil in small soup pan. Add onions and cook till translucent. Add orzo and turmeric and cook for a few minutes. Add garlic and cook till fragrant. 3) Add rice and toss. 4) Add salt, broth, and lemon juice. Bring to boil and then lower to a simmer. Cover and cook for 20 minutes or till rice is done. 5) Leave covered for at least 10 minutes. 6) Fluff the rice and mix in the dill. |
