Hanger steak with thyme

ingredients: 4 hanger steaks, about 14 oz each

Marinade
2 tsp crushed hot red pepper flakes
2 tsp boiling water
3/4 cup extra virgin oilive oil
8 garlic cloves, peeled, halved, germ removed, chopped
1 1/2 Tbsp firmly packed dark brown sugar
1 1/2 Tbsp soy sauce
1 1/2 Tbsp rice wine vinegar
2 thyme sprigs

Seasoning blend
1/2 Tbsp garlic powder
1/2 Tbsp kosher salt
1 Tbsp ground black pepper
1 1/2 tsp ancho chili powder

Compound butter
1 stick of unsalted butter, softened at room temperature
1/8 cup finely chopped flat-leaf parsley (or 1 Tbsp dry)
1 Tbsp finely chopped shallot
1 garlic clove, peeled, halved, germ removed, and grated on a microplane grater
Zest of 1/2 a lemon
1 tsp fresh ground black pepper
1 tsp kosher salt
 
instructions: 1) Microwave water in a small bowl for 30 seconds until hot. Add red pepper flakes to rehydrate. Let it sit for at least 3 minutes.

2) Combine all of the marinade ingredients including the flakes and water. Place steaks in a plastic bag and pour marinade over the meat. Refrigerate overnight.

3) Next day: Combine all compound butter ingredients and let it sit out to soften.

4) Start the grill! This recipe requires a hot side and a warm side.

5) Combine the seasoning blend ingredients.

6) Remove the steaks from the bag, letting any excess marinade run off into the bag. Season the steaks on both sides with the seasoning blend.

7) Place the steaks on the hot side of the grill for at least 2 minutes to mark. Keep the grill open. Flip, keep the lid open, and cook for at least 2 minutes.

8) Flip again to the warm side and brush on the compound butter. Close the lid in order to reduce flare up. Continue flipping and brushing on the better till the meat is done.
