| ingredients: | 2 russet potato 1 small onion 1/2 tsp table salt 1/4 tsp paprika 1/2 tsp garlic powder 2 Tbsp vegetable oil 1 Tbsp salted butter 4 eggs |
| instructions: | 1) Peel and grate the potatoes. 2) Soak and rinse the potatoes in water until the water runs clear, usually 3 times. 3) Drain the potatoes and ring out using a towel. Dry the potatoes as well as possible. 4) Peel and grate the onion. Squeeze out as much water as possible. 5) Mix potatoes, onion, salt, paprika, garlic powder, in the colander. Let is sit and push out any moisture. 6) Heat the cast iron pan with the oil and butter over medium-high heat. 7) Add the potatoes and push down. Cook for 4 minutes. 8) Slide the potatoes to a plate, add 2 Tbsp to the pan, and slide the flipped potatoes to the pan. Cook for another 3 minutes. 9) Crack the three eggs over the hash browns and add pepper. 10) Broil the eggs in the oven till done. |
