Japanese mixed rice
description:
Rice cooker mixed rice.
 
ingredients: 2 rice cooker cups (300g) of uncooked japanese rice

3 dried shiitake mushrooms
1/2 cup water
3 dried black mushrooms
1/2 cup water

2 pieces age
1/2 carrot, julienned

1 cup dashi
2 Tbsp soy sauce
2 Tbsp mirin
 
instructions: 1) Soak black mushrooms in 1/2 cup water for at least 3 hours. Squeeze out any water into the bowl and slice into thin strips.

2) Soak shiitake mushrooms in 1/2 cup water for at least 3 hours. Squeeze out any water into the bowl and slice into thin strips.

3) Boil the age in water for 10 minutes to remove oil. Let it cool, rinse, squeeze out any water, and slice into thin strips.

4) Wash rice and drain completely for 15 minutes.

5) Combine 1/2 cup water from black mushrooms and 1/2 cup water from shiitake mushrooms into a measuing cup. Add dashi to measuring cup to make 2 cups of liquid.

6) Add liquid to the rice plus soy sauce and mirin. Mix together.

7) Place mushrooms, carrots, and age on top of rice. Do not mix!

8) Cook rice.

9) Add additional soy sauce and salt as needed.
