| ingredients: | 3 bacon slices 5 lbs bone-in pork shoulder roast, cut into 3 equal pieces (include bone) 1.5 Tbsp kosher salt 1 cup water 1 cabbage |
| instructions: | 1) Remove top layer of fat from the pork. Heavily salt. 2) Place the bacon in the instant pot, cold, and then set to saute. 3) Cook bacon till brown on both sides. 4) Remove bacon. Add water to the pot and scrape any fond at the bottom of the pot. 5) Add bacon back to the bottom of the pot. Place pork on top of the bacon. 6) Set pot to high pressure and cook for 90 minutes. 7) Natural release for 15 minutes. 8) Remove pork and loosely cover. 9) Bring liquid to boil and add more water if necessary. Cook cabbage. 10) Discard the bacon as it lost its flavor. |
