Lasagna rolls

ingredients: 9 dry lasagna noodles
2 cups marinara sauce

1 cup ricotta cheese
1 large egg
1 cup shredded mozzarella cheese
1/4 cup parmesan cheese
10 oz package frozen spinach, thawed and squeezed dry, roughly chopped
2 cloves garlic, minced

Seasonings
1/2 tsp dried italian seasoning
3/4 tsp salt
1/4 tsp pepper
1/8 tsp ground nutmeg
 
instructions: 1) Boil lasagna noodles for 10 minutes or until al dente. Toss with olive oil so they don't stick together.

2) Preheat oven to 350°.

3) Prepare filling by mixing together ricotta, 1/2 cup mozzarella, parmesan, egg, spinach, garlic, and seasonings.

4) Spoon 1 cup of the marinara sauce on the bottom of a 9"x9" pan.

5) Spread filling on each noodle, roll up, and place in pan.

6) Top with remaining 2 cups of marinara sauce, spreading it to cover all of the noodles.

7) Add remaining 1/2 cups of mozzarella and a sprinkle of parmesan.

8) Cover with foil and bake for 35 minutes or until completely heated.

9) Remove foil and bake for another 5 minutes.
