| ingredients: | 1 and 1/3 cup whole wheat pastry flour (or any flour) 1/2 teaspoon baking soda 1/2 teaspoon salt 1/4 cup butter 3/4 cup sugar (or a little less) 2 eggs 1 teaspoon vanilla extract 2 tablespoons lemon zest 1 tablespoon lemon juice 3/4 cup plain fat free greek yogurt 1 tablespoon poppyseeds |
| instructions: | 1) Whisk flour, baking soda and salt 2) In another bowl cream butter, sugar, eggs, vanilla, lemon zest, lemon juice and greek yogurt. Add dry ingredients. Stir in poppyseed 3) Fill muffin tins about 2/3 full. Bake at 450° for 12 minutes until an inserted toothpick comes out clean |
