Lentil curry

A vegan Indian curry dish.
 
ingredients: 2 Tbsp olive oil
1 onion, chopped fine
1 jalapeno, seeds removed, chopped fine
2 cloves garlic, chopped fine
1 Tbsp ginger, grated

3 roma tomatoes, chopped fine
2 carrots, cut into irregular pieces

1 tsp cumin
1 tsp coriander
1/2 tsp turmeric
2 tsp garam masala
1 tsp table salt
1 tsp paprika

1 cup green lentils, rinsed
1 can coconut milk
1.5 cup water
 
instructions: 1) Heat oil in pan. Cook onions and jalapeno till translucent.

2) Add garlic, ginger. Cook for 1 minute.

3) Add tomatoes and carrots and cook for 5 minutes

4) Add all the spices and cook for 1 minute.

5) Add lentils, coconut milk, water. Bring to boil.

6) Cover and simmer for 25-30 minutes. (Shorter if using red lentils)

7) Turn off heat and let it sit covered for another 10 minutes. If lentils isn't soft enough, simmer for another 5-10 minutes.
