Mexican rice
description:
A nice and easy side dish.
 
ingredients: 3 Tbsp vegetable oil
1/4 cup chopped onion

1 1/4 cup chinese rice (standard dry measuring cup)
1 garlic, smashed
1/2 tsp table salt
1/2 tsp ground cumin
1/2 cup tomato sauce
2 cups chicken broth
 
instructions: 1) In a large sauce pan, heat up oil until shimmering.

2) Sautee onions until softened and season with salt and pepper.

3) Add rice and cook until translucent. Be sure to mix the rice every so often to prevent sticking.

4) Add cumin and salt and mix.

5) Add garlic and cook for 30 seconds.

6) Add tomato sauce and mix together.

7) Add chicken broth. Bring to boil.

8) Continue to mix to ensure that the rice doesn't stick to the bottom of the pot.

9) Cover and simmer for 15 minutes or until the liquid has been absorbed by the rice and the rice is fully cooked. Do not open.

10) When the liquid has been absorbed, open, taste. Return back to heat if not at desired tenderness.

11) Move off heat and let it sit for 10 minutes. Fluff the rice.
