Misoyaki Butterfish

ingredients: 1 lbs black cod / sablefish (butterfish)

3/4 cup mirin
1/4 cup sugar
1/3 cup yello miso
 
instructions: 1) Combine sake, mirin, sugar, and miso in a small saucepan and simmer until it becomes a dark, caramel color, 5-10 minutes.

2) After marinade has cooled, Salt the fish. Submerge fish completely and refrigerate overnight.

3) Preheat air fryer at 325°.

4) Remove as much sauce from the fish. Salt fish.

5) Heat the sauce in a small saucepan to cook any fish juices.

6) Place fish on parchment paper within the air fryer and cook for 10 minutes.

7) Increase temperature to 350° and cook for another 5 minutes or until internal temperature reaches 140°.
