Mochiko chicken
description:
A sweet and spicy fried chicken cooked in the air fryer.
 
ingredients: 1 lb chicken thighs, cut in half

Marinade
14 g cornstarch
50 g mochiko flour
1 Tbsp sugar
1 Tbsp gochujang
1 Tbsp ginger, minced
1 Tbsp sake
1 Tbsp soy sauce
1 Tbsp water
1 egg

Flour mixture
1/4 cup cornstarch
1/4 cup flour
1/2 Tbsp garlic salt

Gochujang mayo
1/3 cup mayo
1/2 tsp gochujang
1/2 tsp sugar

Sweet miso glaze
1/8 cup sugar
1/8 cup mirin
1 tsp sake
1/2 tsp yellow miso
 
instructions: 1) Mix everything except the cornstarch and mochiko flour in a bown. Whisk in the mochiko flour and cornstarch.

2) Add the chicken and refridgerate overnight.

3) Gochujang mayo: Mix together everything.

4) Sweet miso glaze: Heat the sugar, mirin, and sake in a small pot over medium heat. After the sugar is fully dissolved, remove from heat and add the miso and mix together.

5) Preheat the air fryer at 375°.

6) Mix together cornstarch, flour, and sake in a bowl. Coat the chicken in the flour, move to the air fryer basket, and brush on a layer of oil. Flip and brush the other side too.

7) Cook the chicken for 5 minutes, flip, and cook for another 5 minutes.

8) Brush on another layer of oil and then cook for another 5 minutes, flip, and another 5 minutes.
