| ingredients: | 1 Tbsp unsalted butter 1 large onion, sliced thin 2 cloves garlic, minced 3 portobello mushrooms, gills removed, sliced thin 10 shiitake mushrooms, rehydrated, sliced 1 tsp dried thyme (or 1 Tbsp fresh) 1 Tbsp dijon mustard 1.5 cups shiitake mushroom water 1/4 cup mirin 1 bagette, cut into four pieces 4 slices provolone cheese |
| instructions: | 1) Add 1 Tbsp oil and butter to the dutch oven. Cook onions till slightly browned. Add a dash of sugar and salt to flavor. 2) Add garlic and cook for 30 seconds. Remove from pan. 3) Add 1 Tbsp oil and cook both mushrooms in the pot. Cook until portobellos are cooked through and liquid is dissolved. 4) Add onions back to the pan. Add thyme and dijon mustard. Cook for 30 seconds. 5) Add liquid and simmer till slightly reduced, 10 minutes. 6) Remove mushrooms and onions. 7) Assemble sandwiches and broil to melt the cheese. |
