Nishime (mom's recipe)

ingredients: 1/4 lb pork (country style ribs, sliced thin, salted)
2 pieces dried mushrooms (soak, wash)
2 aburage
1/3 can bamboo shoots
1 carrots
1/2 daikon

1 Tbsp oil for pork
1/2 cup water

Sauce
1/2 cup soy sauce
1/8 cup sugar (this was reduced by half from my mom's recipe)
 
instructions: 1) Soak kombu in water and tie knots about 2" apart.

2) Cut between knots. Cut carrots, daikon, mushrooms, aburage, and bamboo shoots in 1" pieces.

3) Fry pork in oil until light brown.

4) Add water, mushrooms, bamboo shoots, aburage, and kombu. Cover and cook for 10 minutes.

5) Add sauce and cook for 15 minutes.

6) Add daikon, carrots and cook until soft.

7) Add salt if needed.
