Nishime (instant pot)

Traditional New Years' dish cooked in an instant pot.
 
ingredients: Dashi
1 cup water
3/4 tsp hondashi
5 dried shiitake mushrooms, rinsed

Nishime
20 snow peas
1 bamboo shoot
1 lotus root, pealed and sliced into 1/4" slices
2 carrots, pealed and cut into irregular pieces
1/2 daikon, pealed and cut into irregular pieces
1 gobo stick, pealed and cut into irregular pieces
3 age pockets, sliced into small cubes
3/4 lb chicken thighs (or pork), cut into small pieces
1.5 Tbsp sesame oil

Sauce
2 Tbsp sugar
2.5 Tbsp mirin
1 Tbsp sake
5 Tbsp soy sauce
1/2 tsp kosher salt
 
instructions: 1) Bring the water to a boil, add hondashi. Turn off the heat, add the mushrooms, and cover. After 15 minutes, squeeze out the mushrooms, and strain the dashi, removing any debris.

2) Slice the mushrooms and set aside.

3) Bring water to boil in a small pot, and blanch the snow peas for 60 seconds.

4) In the pot used for the snow peas, add the bamboo shoots and boil for 20 minutes. Remove and slice the bamboo shoots.

5) Set the instant pot to sautee on low heat. Brown the pork/chicken in sesame oil.

6) Add everything except the snow peas to the pot.

7) Cook on high pressure for 3 minutes. Let the cooker naturally release for 15 minutes.

8) Add the snow peas and season to taste.
