Okinawa Pork

ingredients: 1 cup soy sauce
2 cups water
2 Tbsp sake
1 Tbsp miso
3/4 cup sugar
1 Tbsp minced ginger
1 Tbsp minced garlic
6 lbs pork butt (trim fat and cut into thirds)
 
instructions: In a large pot, combine soy sauce, water, sake, miso, and sugar. Bring to a boil, lower heat, and simmer until sugar and miso dissolve.

Add ginger and garlic. Cook 5 minutes.

Add pork and cook on high heat until sauce boils. Lower heat to medium, cover, and simmer for 2 hours.

Remove pork from sauce, slice, and serve.
