Onigiri

Salmon and rice musubi.
 
ingredients: 1 salmon fillet
1 Tbsp kosher salt

2 cups uncooked japanese rice

Furikake
Sesame oil
Table salt
 
instructions: 1) Rinse and dry off the fish. Heavily salt with the kosher salt and let it sit in the fridge overnight.

2) Cook the fish in the toaster oven at 350° for 10-15 minutes until it registers 130°.

3) Once cooled, flake the fish and remove any bones. Taste and add more salt if needed. The fish should be salty as it'll reside in the rice.

4) Let the rice cool down in the closed cooker for at least 10-15 minutes.

5) Transfter half the rice to a mixing bowl, add furikake and a tsp of sesame oil. Mix thoroughly, taste, and add salt if needed.

6) Form musubi with salmon on the inside.
