| ingredients: | 8 oz flat rice noodles 4 Tbsp oil, divided into two 4 eggs 1 box of extra firm tofu, cut into cubes, pressed, salted 12 Tbsp Thai Kitchen pad thai sauce (this should be the entire 8oz jar) 4 green onions 1 bag bean sprouts lime wedges |
| instructions: | 1) Soak the rice noodles in warm water for 1 hour. Or follow the instructions on the rice noodle bag. Drain and rinse. 2) Heat the air fryer at 375 for 5 minutes. Brush the tofu with oil and air fry for 20 minutes, tossing every 5 minutes. 3) Heat a non-stick wok at medium-high heat with 1 Tbsp oil. 4) Scramble the eggs in the wok and remove. 5) Add the remaining oil and toss the tofu to heat up. 6) Add the noodles, egg, green onion, bean sprouts, and pad thai sauce. Cook until the bean sprouts and cooked to desired doneness. 7) Serve with lime wedges. |
