| ingredients: | 4-5 lb pork butt (bone-in is better) Brine 1 cup table salt 1/2 cup sugar 3 Tbsp liquid smoke 3 quarts water Dry rub Memphis dust |
| instructions: | 1) Combine brine in the large metal bowl. 2) Trim outside fat from pork. Cut pork in half and submerge in brine. Place in the fridge for an hour and then leave on counter for another hour. 3) Remove pork and pat dry. Coat with memphis dust. 4) Set oven to 300°. 4) Line sheet pan with heavy duty foil and place rack on pan. Place both pieces of pork on the rack and cover with parchment paper. Cover with another layer of heavy duty foil and seal tightly. 5) Place in oven and cook for 3 hours. 6) Cafefully remove from oven and remove foil. 7) Drain liquid from the pan, place pork back on the rack/pan, and back in the oven. Set oven to 275°. 8) Place temperature probe in pork and place in oven till the pork hits 205°. 9) Remove pork and cover with foil for at least 30 minutes. 10) Shred pork and spoon drippings on the pork for added flavor/moisture. |
