| ingredients: | two 8oz pkgs cream cheese, warmed at room temperature 1 cups canned solid pack pumpkin 1 cups brown sugar (packed) 1 Tbsp cinnamon 1 Tbsp vanilla extract 2 large eggs 2 cups sour cream 1/4 cup sugar 1 teaspoon vanilla graham cracker crust (see recipe) within a spring form pan |
| instructions: | Preheat oven to 350°. Using electric mixer, beat cream cheese in large bowl until smooth. Add pumpkin, brown sugar, cinnamon, vanilla and beat until well blended. Add eggs 1 at a time, beating just until blended after each addition. Pour batter into crust. Mix sour cream, sugar, and vanilla until smooth to make topping. Bake cheesecake until top is golden and center is softly set about 1 hour 15 minutes. Remove from oven and cool for 10 minutes. Add topping and return to oven for 5 minutes. Remove and place on cookie rack. Cool completely. Cover and chill overnight. |
