Rolled egg
description:
Be sure to oil the pan with every roll.
 
ingredients: 4 large eggs
2 tsp sugar
1 tsp hondashi
1 tsp soy sauce
1 tsp mirin
3 Tbsp milk
2 pinches of salt
 
instructions: 1) Whisk all of the ingredients in a bowl.

2) Heat up a non-stick pan and oil the pan evenly when hot.

3) Pour a very thin layer of the egg mixture into the pan and spread evenly.

4) Once set (which is roughly one minute), roll the egg to one side of the pan. This will require chopsticks and possibly a spatla.

5) Add more oil to the pan and spread it out evenly.

6) Repeat steps 3-5 till you're out of the egg mixture. The number of times will be based on the size of your pan. Please note that step 4 will require you to roll in a different direction.
