Saimin
description:
A copycat saimin recipe that serves a family of four.
 
ingredients: Dashi
8 cups water
5 shitake mushrooms
4x8 in of dried kombu

Steep ingredients
90 g dried shrimp
6 garlic cloves, crushed
1 in ginger, peeled and sliced thin
1 large carrot, peeled and sliced
1 leek, including dark green parts, sliced and washed

Soup finisher
6 tsp chicken stock powder

Each bowl
1 Tbsp soy sauce
1/2 tsp hondashi
 
instructions: 1) Rinse the mushrooms and soak in the water with the kombu for several hours.

2) Slowly bring the dashi up to a near boil and remove the kombu. Skim any bubbles off the top.

3) Turn off the heat, add the steep ingredients, and cover for 45 minutes.

4) Strain out the soup, mix in the chicken stock powder, and heat the soup for serving.

5) Cook the noodles.

6) Add the soy sauce and hondashi to each bowl and divvy up the soup amongst the bowls.

7) Add the noodles and serve with ramen eggs, carrots/mushrooms, and kamaboko.
