| Salmon Filets with Cabernet Balsamic Glaze |

| ingredients: | 4 - 6 oz salmon filets Salt and pepper to taste 6 tablespoons olive oil 1/4 cup minced red onion 1 tablespoon minced garlic 1 cup cabernet 1/2 cup balsamic vinegar 2 tablespoons brown sugar |
| instructions: | 1) Marinate salmon in 2 tablespoons olive oil, salt and pepper for 1 hour. Remove from fridge and bring to room temperature 2) In skillet over medium heat add 2 tablespoons oil and onions, saute until caramelized. Add garlic and cook 30 seconds. Then deglaze the pan with wine and balsamic vinegar. Add sugar and let simmer, uncovered for 20-30 min or until mixture reduces to about 3/4 cup. 3) Heat oil in one large or two smaller skillets. Sear salmon 2-4 minutes per side depending on thickness or to desired doneness. Remove from pan. 4) While filets are searing strain wine mixture and return to heat to reduce for five more minutes or until thick syrup is created. Top each filet with syrup. |
