Salmon Cakes

Can be a little heavy, but so good.
 
ingredients: 3/4 cup mayonnaise
1/4+1/8 cup greek yogurt
1.5 tsp grated zest and 6 tsp juice from 1.5 limes
4.5 Tbsp chopped fresh cilantro or dill

1 1/4 cups panko bread crumbs
1.5 lbs skinless salmon fillets, chopped fine
1.5 (4-ounce) cans whole green chiles, drained and chopped fine

instructions: 1) Whisk mayonnaise, sour cream, lime zest, lime juice, and cilantro in bowl. Season with salt and pepper.

2) Combine salmon, chiles, 5 Tbsp mayonnaise mixture, panko, 3/4 tsp salt, and 1/2 tsp pepper in bowl. Form salmon mixture into eight small, thin patties. Dredge patties in panko, pressing to adhere.

3) Cook in the air fryer at 390° until the internal temperature hits 140°.
