| ingredients: | Seasonings 3 Tbsp sugar 3 Tbsp sake 3 Tbsp mirin 6 Tbsp soy sauce 2 fillets of salmon with skin 1/4 tsp kosher salt 1 Tbsp all-purpose flour 1/2 Tbsp oil 1 Tbsp sake |
| instructions: | 1) Combine all of the ingredients for the seasonings and mix well until the sugar is dissolved. This may require the microwave. 2) Rinse the salmon and pat dry. Season the salmon with koster salt on both sides. Set aside for a while to absorb the salt. 3) Sprinkle the all-purpose flour on both sides of the salmon. 4) In a frying pan, add the oil over medium heat. 5) Add the salmon filets skin side up. Cook the salmon for 3 minutes or until nicely browned. 6) Flip the salmon and add the sake and cover with a lid. Steam the salmon for 3 minutes. Move the salmon to a plate and cover while the sauce comes together. 7) Add the seasongs to the pan and increase the heat a little. When the sauce starts to boil, add the salmon back to the pan and spoon the sauce over the salmon. Cover to finish cooking if needed. 8) When the sauce thickens, turn off the heat and serve. |
